Chorizo scotch eggs

I never used to like scotch eggs – but then I discovered home made ones which are simply delicious. They are so easy to make and served with homemade mayo makes a perfect meal.

INGREDIENTS

Serves 6

450g sausage meat
6 chorizo sausages
7 eggs
100g plain flour
150g white breadcrumbs
1tbsp chopped sage leaves
sea salt & freshly ground pepper
sunflower oil

For the mayo
2 egg yolks
1 tbsp Dijon mustard
1 tbsp white wine vinegar
250ml sunflower oil
juice of 1/2 lemon
sea salt & freshly ground pepper

Place 6 eggs in large saucepan full of cold water, put on heat and bring to a boil (use a thermometer if you are not sure when it is properly boiling). Take off heat and leave for 6 minutes then put into bowl of ice cold water (with lots of ice if you have it). Peel when cooled.

Prepare 3 shallow bowls with seasoned flour, beaten egg and breadcrumbs.

MIx sausage meat and chorizo (sausage casings removed), chopped sage, season. Put a handful of sausage mix in palm of your hand, place an egg in the middle and wrap it with sausage mix. Roll egg in flour, beaten egg, then coat with breadcrumbs. Heat deep pan with 5 cm of oil, heat to 150°C. Carefully put eggs, 3 at a time depending on the size of your pan, fry for approximately 10 minutes, turning it until golden brown all over. Put on a plate with kitchen towel

To make the mayonnaise, put all the ingredients bar oil in a blender and whizz. Then slowly add the oil, keeping the blender running, until you have the right consistency.
