Crespelle bolognese

An alternative bolognese or way of eating pancakes. Its simple and delicious.

INGREDIENTS

Serves 4

for the pancakes
2 eggs
100g plain flour
200ml milk

for the bolognese
500g beef mince
100g smoked bacon or pancetta in cubes or chopped
1 large onion finely chopped
1 large celery stick finely chopped
1 carrot diced
2 chopped cloves of garlic
400g tinned tomatoes
1 tbsp tomato puree
1/2 tsp worcestershire sauce
1 bay leaf
1 tsp orgegano
1 sprig rosemary
sea salt & freshly ground pepper
2 tablespoons olive oil

for the béchamel sauce
50g unsalted butter
50g plain flour
500ml milk
50g grated cheddar or mozzarella

Preheat oven to 180°C

Put cubed butternut in roasting tray, season and toss in olive oil. Roast for 20 minutes. Fry onion in tablespoon of olive oil until translucent, add garlic, stir for couple of minutes, add tinned tomatoes, stir and simmer approximately 10 minutes until reduced. Drain and add butterbeans warming them, add butternut and kale. Stir until kale has wilted. Season for taste.

Serve with chunky bread or basmati rice.
