Multi seed flapjacks

Don’t panic if you skip the odd lunch or breakfast while you are revising. Have a few of these in your bag.

INGREDIENTS

Makes 16 squares

250 multi seed porridge oats or 100g regular oats and add in the seeds
170g unsalted butter (or coconut oil if you want a vegan version)
140 coconut palm sugar (or demerara sugar)
100g chopped pitted dates or saltanas
pinch of salt

Preheat oven to 180°C
Line a 20cm x 30cm baking tray with greaseproof paper

Measure the oats, dates with salt in a bowl.

In a small saucepan melt the sugar and butter. Pour into the dry ingredients and mix well. Tip into the baking tray and press down with the back of a spoon. Put in the oven for approximately 15 minutes. Leave to cool for 10 minutes and cut into squares. Allow them to cool completely before lifting them out and storing in an airtight container.

Approximate cost £2.75 or £6.00 with coconut palm sugar!
