Pan fried Brussel sprouts with bacon

Don’t be put off if you think you don’t like boiled soggy sprouts, this is a great veg option (cheap & easy) to go alongside some roast chicken but can also be a meal in itself. Put a poached or fried egg onto for a quick & delicious meal.

INGREDIENTS

Serves 2

400g Brussell sprouts
2 rashers streaky bacon
3 spring onions
sea salt & freshly ground pepper
2 tablespoons olive oil

Chop spring onions into thin rings. Take bottom of core of sprouts, slice each into approximately 5. Cut bacon into strips. Put a tbsp of olive oil in a frying pan, add bacon and cook for couple of minutes. Add the rest and cook, stirring for about 5 minutes.

Pile onto plates with a poached egg on top.
