Delicious any time of year with a dollop of vanilla ice cream or just cream of any kind!
1kg rhubarb cut into 4cm chunks
zest of 1 orange
2 tbsp corn flour
4 tbsp runny honey or brown sugar
240g plain flour
150g unsalted butter cut into cubes
120g demerara sugar
Preheat oven to 180°C
Put rhubarb into an ovenproof dish. Grate orange zest onto rhubarb, add corn flour, sprinkle sugar or honey and mix briefly.
Mix butter and flour in a bowl with fingertips until it resembles large breadcrumbs. Mix in sugar.
Cover rhubarb evenly with crumble mix. Bake in oven for approximately 45 minutes.
