Spelt banana bread
Banana bread with even more energy and low GI. Perfect for breakfast or snacking
INGREDIENTS
Makes 900g loaf
225g spelt flour
1 teaspoon baking powder
100g margarine
225g ripe bananas
100g coconut sugar
5 tablespoons honey plus a little more for the topping
2 eggs
rind of 1 lemon
a pinch of grated nutmeg
Preheat oven to 180°C
Combine the flour, margarine and nutmet in a bowl, using your fingertips, rub to create a fine breadcrumb mixture. In another bowl, mash the banana with a fork and mix with sugar and lemon rind, eggs and honey. Mix the wet and dry ingredients together and put in a lined loaf tin.
Bake in the oven for approximately 35 minutes. Check with a skewer or knife that is it cooked, ideally you will want it not too dry so as long as there is no sticky mixture on your skwer, it will be ready to take out of the oven.
Melt a couple more tablespoons of honey when the loaf had cooled and brush on top.
