Orange & almond cake

This is a gluten free recipe. If you are ok to eat gluten, you can make a much cheaper version of just orange cake. But the almond makes it more delicious. You could try half and half as well.  Delicious cold with a cup of tea or warm served with a dollop of creme fraiche as a pudding.

INGREDIENTS

Serves 8

2 oranges
230g unsalted butter
230g ground almonds
2 1/2 tbsp gluten free baking powder
200g caster sugar
4 eggs

 

Set oven at 180 C

Line and grease a 20cm cake tin.
Cream butter and sugar in a food processor of with hand held electric whisk. Add eggs one at a time. Add orange zest and juice. Fold in ground almond and baking powder. Pour into cake tine and bake for approximately 35 minutes or until skewer comes out clean.

Approximate cost £7.00 (less than £1 per slice). If you are not worried about it being gluten free, you can use flour instead of ground almond and make it much cheaper.
