Almond & tahini millionaires shortbread

Millionaires shortbread is the family favourite treat of all time; the problem is, it is just too full of sugar & butter…
This is really a good alternative – although not cheap to make (almonds & dates) think how much you would spend on a coffee & treat form a café.

INGREDIENTS

Makes a 25cm x 25cm tray

for the base
200g almonds
75g almond butter
1 tbsp coconut oil
175g pitted dates

150g tahini
50g almond butter
200g pitted dates

75g dark chocolate or raw cacao powder
2 tbsp coconut oil

Line the baking tray with greaseproof paper. Blitz the almonds in a food processor until they look like breadcrumbs. Add dates, almond butter, coconut oil and continue to blitz until they are all incorporated. Tip into baking tray and press down with the back of a spoon every around the tray including into the corners. Put in freezer while you make the rest.

Blitz the rest of the ingredients (bar chocolate and coconut oil) to make the ‘caramel’ middle layer. Take the baking tray out of the freezer and layer on top.

Melt chocolate with coconut oil and pour on top. Best kept in the fridge if it isn’t polished off in one sitting.
