Apple & cinnamon traybake

Another version of my favourite traybake – makes 24 large squares so freeze half or more unless you are having lots of people round for tea!


Makes 24 squares in a 20cm x 30cm baking tray

250g cooking apples peeled, chopped & thickly sliced
275g unsalted butter
275g golden caster sugar
400g self raising flour
1 1/2 teaspoons baking powder
5 eggs
1 teaspoon cinnamon
zest of 1 lemon
4 tablespoons milk
30g flaked almonds (optional)

For the icing
125g sifted icing sugar
2 to 3 tablespoons lemon juice
1 teaspoon vanilla extract

Preheat oven to 170°C
Line a 20cm x 30cm baking tray with greaseproof paper.

Beat sugar and butter in a blender. Add eggs, then flour, baking powder, cinnamon, lemon zest and milk. Fold in half the apple and scoop mixture into baking tin. Add the remaining apple on top, scatter the flaked almonds. Bake for approximately 30 minutes.

Once completely cooled, mix the icing sugar with lemon juice and vanilla. Drizzle onto cake in zig zag lines and leave to set.
