Aubergine, lentil & pomegranate bowl with tahini & miso dressing

Bowl of delicious vegetables & protein which can be eaten at anytime!

INGREDIENTS

Serves 4

2 aubergines halved lengthways, cut into 1cm thick slices
150g lentils (green or brown)
1 onion finely sliced
2 chopped garlic cloves
260g French beans, tender stem broccolli (any green veg)
150g short grain brown rice (or any rice you have, I particularly like this rice which is nutty and filling)
seeds of 1/2 pomegranate
1/2 tsp ground cumin
1/2 tsp ground coriander seeds
2 tbsp tahini
1 tbsp miso
1 tbsp pomegranate molasses or runny honey
juice of 1/2 lemon
handful chopped flat leafed parsley
sea salt & freshly ground pepper
6 tablespoons olive oil

Preheat oven to 180°C

Put aubergine in a large bowl and mix with 2 tbsps olive oil and seasoning. Place on roasting tray and place in oven for approximately 35 minutes. Cook lentils for approximately 20 minutes and the rice.

Fry onions in tbsp of olive oil, add garlic and spices. Set aside lentils when they are cooked and mix together.

For the dressing, mix tahini, miso, pomegranate molasses/honey, lemon juice and 3 tbsps olive oil.

Put scoop of rice in a bowl, lentil mix, top with aubergine, beans and drizzle dressing, scatter parsley.
