Baked sea trout

This method works with salmon or pretty much any fish. I love the combination of the meatiness of sea trout but a lighter flavour & texture than salmon.


Serves 4

piece of sea trout approximately 500g
1 lemon sliced
bunch of dill
small glass of white wine
olive oil
sea salt & freshly ground black pepper

Preheat oven to 200°C

Pat the fish dry with a piece of kitchen towel. Rub some olive oil on the skin side, season on both sides. Place some slices of lemon and few sprigs of dill in the bottom of a foil lined baking tray and place the fish it skin side down. Place more slices of lemon and sprigs of dill, pour the glass of wine around, cover with foil and put in oven for approximately 20-25 minutes until the fished has just turned opaque.
