Biscotti

Always delicious to nibble with a cup of coffee. Also makes a lovely present.

INGREDIENTS

Makes approximately 12

1 egg
75g caster sugar
125g plain flour
1/2 tsp baking powder
grated zest of 1 orange
grating of fresh nutmeg
75g brazil nuts slightly bashed in a bag
50g chocolate chips
(try different combinations of nuts & dried fruit).

Preheat oven to 180°C

Whisk egg and sugar with a hand held whisk until pale yellow and beginning to thicken. Add orange zest, nutmeg, fold in flour and baking powder. Mix in nuts and chocolate. Mould the mix into a ciabatta shape, it can be a bit sticky so use lots of flour on your hands and surface. Place on baking tray and put in oven for approximately 30 mins, turn half way.

Take out and cool for 5 minutes. Cut into 1cm thick diagonal slices with a serrated knife. Placed the slices flat on the baking tray and return to oven for 5 minutes. Turn them over and bake for another 5 minutes until golden brown.

Cool on a wire rack. 6 or so slices in a bag tied with ribbon or sting make a perfect gift.  Can be kept in an airtight container for a couple of weeks.
