Satisfying way of using up left over chicken to make a warming & filling meal

1 finely chopped shallot or ½ medium onion
1 crushed garlic clove
1 bashed lemon grass
500ml chicken or vegetable stock
100g cooked chicken shredded
150g rice noodles
1 red chilli sliced
handful of coriander
4 tablespoons soy sauce
3 tablespoons fish sauce
1 lime
sea salt & freshly ground pepper
sesame oil
