Coffee cake

 

 

This always seems to be the most popular cake in any gathering. The best of many versions I have tried.

 

INGREDIENTS

 

Makes a 18cm cake

170g unsalted butter
170g caster sugar
170g plain flour
3 eggs
1 1/2 teaspoon baking powder
1 tbsp instant coffee dissolved in 1 tbsp boiling water

for the icing
225g icing sugar
100g unsalted butter at room temperature
1 1/2 tbsp instant coffee dissolved as above
walnut halves or chocolate coffee beans or what you have

 

 

 

Preheat oven to 160°C

Cream butter and sugar until pale yellow. Add eggs one at a time as well as flour a little at a time with baking powder. When all combined, mix in coffee and divide into two 18cm grease and lined sandwich tins. Bake for 20 to 25 minutes, test with a skewer in the middle of the cake to test if cooked. Leave to cool in tins then on a wire rack to cool completely.

For the icing, cream the icing sugar and butter either with a hand held whisk or in a food processor, add coffee when fully combined. Spread half the icing on top of one cake, place the other on top and cover the top. Decorate with walnut halves or chocolate coffee beans or whatever you have!
