Easiest chocolate souffle

Impress your friends with the easiest soufflé to round off your dinner party!

INGREDIENTS

Makes approximately 6 depending on size of ramekins

125g best quality 70% dark chocolate
125g unsalted butter
3 large eggs
150g caster sugar
35g plain flour
a bit more butter & flour for preparing the ramekins

Preheat oven to 200°C

Melt butter and chocolate in a bowl over simmering water.
In another bowl whisk together the eggs, four and sugar until blended.
Gradually whisk in the melted chocolate.
Grease and dust with flour the ramekins, tipping them up and tapping the ramekins to get rid of any excess flour.

Put ramekins on a baking sheet and place in the oven for 10-12 minutes until tops are firm and cracking slightly with the edges set but still gooey in the middle. They will continue to cook once taken out of the oven take them out even if they look a little too gooey otherwise they will turn into cakes!

Make a hole in the middle and pour double cream.

These can be prepared in advance and put in the oven when your main course is finished for perfect timing.
