Grilled mozarella, pesto & roasted pepper sandwich
This is a favourite meal or snack at any time of day!
INGREDIENTS
Serves 4
3 red, orange or yellow peppers
125g ball mozarella
1 tin plum tomatoes
1 onion finely chopped
1 chopped garlic clove
50g toasted nuts – pine nuts, almonds or walnuts (Pine nuts are more expensive than most others)
50g herbs – basil, mint, parley, coriander or a combination.
2 tablespoons of lemon juice
25g parmesan, pecorino or hard similar hard cheese
approximately 5 tbsp oil – olive, walnut, rapeseed
sea salt & freshly ground pepper
Preheat oven to 180°C
Place peppers on a roasting tray and put in oven for 35/40 mins until charred. Cool before peeling.
Toast the nuts for around 5 mins in the oven. Blitz the nuts & garlic in the food processor or pestle and mortar. Add the herbs and oil, blitz again. Add pepper, parmesan and a dash more oil if needed. You can blitz the parmesan together with the garlic and nuts but it will be a more lumpy texture.
Make up sandwiches by placing strips of peppers on a slice of sourdough bread, then a couple slices of mozarella, spread a spoon of pesto on the upper side. Best if you have a griddle pan press down on the sandwich with another pan onto, turn after 3 minutes and cook both sides. Otherwise put under a grill for couple of minutes each side.
