Kale & butternut squash tart

Ultimate vegetarian tart


Serves 8-10

for the pastry
225g plain flour
140g unsalted butter
2/3 tablespoons ice cold water

for the filling
150g kale
1 medium sized butternut squash
100ml double cream
250g mascapone cheese
2 eggs & 4 egg yolks
100g grated cheddar
50g grated parmesan
sea salt & freshly ground black pepper

Preheat oven to 200°C

Place the mushrooms flat side down on a baking tray. Combine the breadcrumbs, pine nuts, garlic, parsley with olive oil. Season. Fill the mushrooms with the mixture. Crumble the feta on top and cook in the oven for 25 minutes. Serve on a bed of rocket or peppery leaves. Serve with a fried or poached egg on top for a really filling meal.

Approximate cost £7:50. Making a tart like this is expensive relative to buying a supermarket quiche. Think, however, what you would pay for a slice of delicious tart in a deli or restaurant. This is still only 75p a slice, so tasty & filling.
