Mince pies

Once you make some you won’t be able to eat bought ones again. They are just different!

INGREDIENTS

Makes 12-16

For the pastry
175g plain flour
75g unsalted butter
25g icing sugar (plus a tsp for sprinkling)
grated rind of 1 orange (optional)
1 egg

Approximately 250g mincemeat

Preheat oven to 180°C

Put all the pastry ingredients in a food blender and blitz until the mixture looks like breadcrumbs.Add the egg and continue until the pastry comes together.

Grease a 12 hole tin. Roll out the pastry on a floured surface – not too thin and not too thick, about 4mm thick.  Cut circles big enough to cover the holes (around 7 cm diameter) and 12 stars or whatever shape you choose. Put a teaspoon of mincemeat in each case and top with a star. Don’t over fill with mincemeat as it will burst out when baking and make the pies stick to the tin.

Bake for approximately 15 minutes, until the pastry is just beginning to turn golden at the edges.

Cool on a wire rack and dust with icing sugar
