Miso chicken

Miso is the new tahini, its good with everything!

INGREDIENTS

Serves 2

2-4 chicken thighs, skin on
2 tbsp miso (white or red, try them both as they have different intensity of flavour)
1 tbsp honey
1 tbsp soy sauce
2 tbsp sake (can use dry white wine or sherry)
sea salt & freshly ground pepper

Preheat oven to 180°C

Mix miso, honey, soy sauce and sake. Put chicken in roasting tray, season and coat with miso mixture. Put in oven for approximately 40 minutes, checking every 15 minutes and turning them to stop them from burning.

Serve with rice, any kind – Japanese, basmati, wild or jasmine.
