Orange & almond cake

A most delicious simple to make cake & can be gluten free!


Serves 8-10

2 large oranges
250g ground almonds
250g caster sugar
6 eggs
1tsp baking powder (can use gluten free)
sprinkling of icing sugar

Preheat oven to 180°C

Put the oranges in a saucepan of water, bring to a boil, cover and cook for 1 1/2 hours. Allow to cool, cut them open, remove any pips and whizz the whole oranges in a blender.

Beat the eggs with sugar, add ground almonds and them the orange puree.

Pour into greased cake tin either with a removable base or lined with parchment paper. Bake in oven for approximately one hour, checking a couple of times to make sure the top is not getting burnt and in skewer comes out clean. If it looks like it is burning, cover with foil.

Cool then turn out. Sprinkle with icing sugar. Serve with dollops of whipped cream or creme fraiche.
