Orcchiette with broccoli & anchovies

A real last minute ‘use what you have’ but delicious & cheap!


Serves 2

200g orecchiette, conchiglioni or any flattish shaped pasta
1/2 broccoli
6 anchovy filets in olive oil
1 chopped garlic clove
freshly ground pepper
1 tablespoons olive oil
sprinkling of parmesan

Cut broccoli into florets and boil for 5 minutes. Take broccoli out using a slotted spoon and cook pasta according to packet instructions in the same water. In the meantime, fry garlic in olive oil for a couple of minutes, add anchovies and stir until they have ‘melted.’ Drain pasta keeping a cupful of the cooking liquid. Lightly mash the broccoli with a potato masher or fork, add to anchovies together with pasta and cooking liquid. Season with pepper (no need for salt as anchovies are salty).

Serve immediately with a sprinkling of parmesan.
