Pear & Blackberry Loaf Cake
Delicious autumnal flavours. Eat a slice with a cup or tea or topped with crème fraîche for pudding.
INGREDIENTS
Makes 1 loaf tin
1 pear peeled, cut into chunks
150g blackberries (frozen are fine)
190g butter
190g brown sugar
3 eggs
140g plain flour
50g ground almonds
1tsp baking powder
1/2 tsp almond essence
1/2 tsp ground cinnamon
15g flaked almonds
Preheat oven to 170°C
Cream butter with sugar in a food processor or in a bowl with an electric whisk. Add eggs, one at a time. and almond essence. With a spoon or spatula, mix in the flour, baking powder and ground almond, cinnamon, add fruit. Tip into lined loaf tin. Sprinkle flaked almonds on top. Bake in oven for approximately 50-60 minutes until a skewer inserted in the middle comes out clean.
Approximate cost £5.40 (it would cost less than £3 if you have picked your own blackberries which you have kept in the freezer and could pick a pear off someone’s tree!). Even at full cost approximately 70p per chunky slice, what would you pay in a café?
