Peppers filled with breadcrumbs & feta
You can use any peppers, any colour, Romano or bell. Delicious as a meal in itself with a few green leaves, a starter or part of a veggie meal or with a roast or slow cooked lamb.
INGREDIENTS
Serves 6 as a starter or part of a meal
3 peppers
75g breadcrumbs (I keep ends of loaves of sourdough bread in the freezer and whizz them when I need breadcrumbs)
75g crumbled feta
30g grated parmesan or pecorino
2 chopped cloves of garlic
1 tsp chopped thyme
handful chopped parsley
sea salt & freshly ground pepper
2 tablespoons olive oil
Preheat oven to 200°C
Cut peppers in half and scoop out seeds. Mix all the remaining ingredients in a bowl. Spoon the mix into the peppers, pushing down with the back of a spoon. Bake in oven for approximately 25 minutes until golden brown.
Can be eaten hot straight from the oven or at room temperature, both delicious.
