Pork with plum, sage & autumn veg
I love this combination of all my autumn veg & late summer plums – so easy to make, delicious, cheap & filling! Have some of my fig relish on the side if you have a sweet tooth!
INGREDIENTS
Serves 4
4 lean pork chops
1/2 butternut squash cubed
2 beetroot cut into chunks
2 medium sized potatoes
2 carrots chopped thickly
2 garlic cloves, skin on
6 plums halved
handful of sage leaves
sea salt & freshly ground pepper
2 tablespoons olive oil
Preheat oven to 180°C
Toss all the veg in a roasting tray with olive oil and seasoning, add garlic and sage leaves. Roast for approximately 30 minutes turning half way.
Brush pork chops with olive oil, season and sear in a griddle or frying pan for approximately 6 minutes, flipping half way. Then place on top of the veg when they have roasted for 30 minutes, roast for further 10 minutes.
Serve with buttered kale, spinach or any other green veg.
