Darwin ranch granola
Darwin ranch granola; it didn’t take long to work out why it tasted delicious – its healthy but also has butter & sugar in it!
INGREDIENTS
Makes 2 big jars
115g unsalted butter
60g maple syrup
60g brown sugar
1/4 teaspoon salt
500g jumbo rolled oats
100g pecans
100g walnuts
100g almonds
60g flaked coconut
30g flax seeds
60g pumpkin seeds
150g sesame seeds
60g golden raisins
60g raisins
115g currants
Preheat oven to 165°C
put butter, maple syrup, brown sugar and salt in a saucepan to dissolve. The the butter has melted, turn up the heat and bring to a boil, mix the ingredients and allow to bubble.
Combine all the dry ingredients in a large bowl. Pour on the hot butter mixture and mix well until everything is coated. Turn out into the baking tin, pushing the mixture into the corners and flatten as much as possible. Bake in the oven for approximately 40 mins, or until it its looking quite brown and almost overdone.
Completely cool in the baking tin without stirring. When cool, break up the clumps and mix in the dried fruit. Store in an airtight jar. It will keep for several weeks but mine never lasts that long!
