This can be a meal in itself served with hunks of bread, or perfect served with roast lamb or chicken.
2 medium sized aubergines
2 big garlic cloves finely chopped
2 red onions sliced
2 red or yellow peppers sliced
2 courgettes cuts in 1/2 cm rounds
6 ripe tomatoes
1 400g tin plum tomatoes
handful fresh basil
1 tablespoon balsamic vinegar
sea salt & freshly ground pepper
2 tablespoons olive oil
Fry the onions in the olive oil in a large pan until translucent and soft. Add garlic spices. Then add peppers and aubergines, stir for 5 minutes. Add courgette and tomatoes, continue stirring. When the tomatoes are soft and have broken up, add the tinned tomatoes, stir for a further couple of minutes then place lid on the pan and simmer for 15 minutes. Take lid off to thicken the sauce.
