Roasted salmon with sweet potato & tomatoes
This is one for having friends round for dinner. Make it in 20 minutes in ‘one pot.’
INGREDIENTS
Serves 4
4 salmon or sea trout fillets
3 medium sized sweet potatoes peeled and cubed
200g cherry tomatoes on the vine
sea salt & freshly ground pepper
2 tablespoons olive oil
Preheat oven to 180°C
Place sweet potato cubes in the bottom of a roasting pan, toss with olive oil and seasoning. Roast in oven for 12 minutes. Take out pan and place salmon fillets evenly on top, then the tomatoes, season and replace in oven for another 12 minutes.
Serve with green beans, broccoli or any green vegetable.
