Rosemary & sea salt nuts

Make a batch when friends come round for drinks.

INGREDIENTS

Makes a couple of big bowlfuls

500g mixed nuts – any combination you like
1 teaspoons sea salt
1 teaspoon garam masala
2 tablespoons olive oil
2 tablespoons light brown (preferably muscavado) sugar
couple of sprigs rosemary chopped

Put all the nuts in a large frying pan and gently stir for 5 minutes to warm/lightly roast them. Add the salt and cayenne pepper continuing to stir. Add the oil, rosemary and sugar and mix until all the nuts are coated.

Take off the heat and allow to cool. Serve while warm. They can be pre cooked, stored in an airtight container and warmed up on a baking sheet in the oven for a couple of minutes or just eaten as they are.

Approximate cost £6.00 – some nuts are more expensive than others.
