Sausages & mash with roasted tomatoes

A slightly more sophisticated version of bangers ‘n mash & absolutely delicious! Use vegan sausages if you prefer.


Serves 2

6 sausages (pork or vegan, whatever you fancy)
250g cherry tomatoes
2 stalks of rosemary
4 medium potatoes
sea salt & freshly ground pepper
2 tbsp olive oil
1tbsp balsamic vinegar

Preheat oven to 180°C

Put tomatoes in roasting tray, place sausages on top with rosemary sprigs, season and sprinkle on olive oil and balsamic vinegar. Roast for approximately 35 minutes. In the meantime, peel potatoes, cut into even chunks, steam for 20 minutes or until soft (you can boil if you don’t have a steamer). Mash, add butter, milk and seasoning.

Put a dollop of mash on a warmed plate, pile on a large spoon of tomatoes, place sausages on top. Eat straightaway.
