Spaghetti with artichokes, garlic & rosemary

You can make this in 10 minutes.


Serves 2

200g spaghetti
150g chargrilled artichokes in olive oil
1 garlic clove finely sliced
1 sprig rosemary chopped.
zest of 1 lemon
sea salt & freshly ground pepper
1tbsp olive oil

Cook spaghetti according to packet instructions.

Take a tbsp of olive oil from the artichokes, cook garlic for a couple of minutes, add artichokes and rosemary. Drain spaghetti when cooked, reserving a cupful of the liquid. Toss spaghetti in artichokes, add pasta liquid a little at a time until the right consistency (not too runny), add lemon zest, serve with parmesan.
