Spelt flour & chia seed pancakes

A delicious & healthy version for pancake day or any day! Its more filling than regular pancakes so you won’t need to eat as many!

INGREDIENTS

Serves 4

100g spelt flour
150ml milk
1 tsp bicarbonate of soda
1 egg
25g chia seeds
15g coconut sugar
pinch of salt
small knob of butter

Mix all the ingredients in a bowl. Leave to stand for a few minutes. Melt butter in a pan, pour a ladleful of pancake mix & spread evenly in pan by tipping it gently in a circle. Cook for a couple of minutes until bubbles appear on the top. Flip & cook for another minute or two.

Serve with fresh berries, bananas, whatever you have & warmed maple syrup.
