Spelt with smoked mackerel, edamame & roasted tomato

This is another one of those filling & delicious salads which can be made from any number of combinations depending what you have in the fridge & freezer.

INGREDIENTS

Serves 4-6

1 packet smoked mackerel, skin removed & flaked
150g frozen edamame beans
3 spring onions finely sliced
150g spelt, rinsed & cooked (you can use bulgar wheat, quinoa, any grains or a combination)
300g cherry tomatoes
1 tbsp capers
handful chopped parsley
sea salt & freshly ground pepper
juice of 1/2 lemon
2 tablespoons olive oil

Preheat oven to 180°C

Place tomatoes on a small baking tray, season, add a glut of olive oil and put in oven. In the meantime, wash the spelt and boil for approximately 20 mins until tender but with a slight nutty crunch to it and drain. Cook the edamame for 5 minutes, drain and run under cold water. Flake mackerel, taking off the skin. Mix all the ingredients together and put juicy roasted tomatoes on top.
