Two tone rice
This recipe always features in our family as one of the top choices. It’s Japanese home food which you won’t get in a restaurant, delicious, filling & so easy to make.
INGREDIENTS
Serves 4
200g minced beef
1 tbsp each of sake, sugar, soy sauce
4 eggs
1/2 tbsp sugar
pinch of salt
300g uncooked rice (preferably ‘sushi’ or Japanese rice)
seaweed or ‘nori’ sprinkles or sheets chopped
Put rice onto cook according to packet instructions or in a rice cooker. This needs to be done ahead of the rest as meat and eggs take minutes to cook.
Fry the minced beef in a non stick pan, quickly stirring with 3 or 4 wooded chopsticks (or if you don’t have any a couple of ends of wooden spoons) until brown all over. Add sake, sugar and soy, keep stirring until the liquid has evaporated. Keep warm and put aside.
Crack the eggs onto a jug or small bowl, tip into another non stick pan. Add sugar and salt, stir rapidly with chopsticks over a low heat until eggs begin to cook like scrambled eggs.
