Week beginning 16th March

Sadly not going out to parties but it gives me time to do more cooking. I’m thinking of quick, cheap meals from the store cupboard which you might want to replenish.

INGREDIENTS

Serves 2

5 chicken thighs with skin on
6 sausages (pork or vegan, whatever you fancy)
2 rashers streaky bacon

250g cherry tomatoes
400g Brussell sprouts
1 cauliflower
1 red onion
3 medium sized potatoes
3 lemons thinly sliced
3 spring onions
handful chopped flat-leafed parsley
1 tbsp red wine vinegar
1tbsp balsamic vinegar
3 garlic clove finely sliced
1 tbsp capers
1 small bunch of thyme
2 garlic cloves with skin on

100g caster sugar
150g honey
40g sultanas soaked in some 50ml warm water
225g self-raising flour
1 teaspoon baking powder
50g walnut pieces
1 egg

sea salt & freshly ground pepper
2 tablespoons olive oil

Meal plan for the week;
Monday – Roasted cauliflower with lentils
Tuesday – Sausages with roasted tomatoes and mash
Wednesday – Pan fried brusell sprouts with bacon
Thursday – Warm aubergine salad
Friday – Pasta with grilled artichokes
Saturday/Sunday – Chicken thighs with lemon & capers

Treat – Walnut loaf
