Week beginning 2nd March

Keep things simple this week as you head towards the end of term and deadlines…. Don’t forget its Mothering Sunday next weekend, if you are near enough your mother, make her day by cooking her a meal, either from this week’s list of any of the other recipes on Home Cooks.


Serves 2/4

500g beef mince
100g smoked bacon or pancetta in cubes or chopped
6 large onion
3 spring onions
1 large celery
1 carrot diced
300g cherry tomatoes
250g medium sized tomatoes
2 medium sized aubergines
handful fresh basil
1 lemon
1 1/2 whole garlic
1 bay leaf
1 tsp orgegano
2 bay leaves
2 sprigs of thyme
1 sprig rosemary
handful parsley

1 packet smoked mackerel, skin removed & flaked
150g frozen edamame beans
600ml double cream
30g grated parmesan
200ml milk
205g unsalted butter (or 175g coconut oil if you want a vegan version flapjacks)
150g spelt, rinsed & cooked
400g tinned tomatoes
1 tbsp tomato puree
1/2 tsp Worcestershire sauce
2 eggs
1 tbsp capers
100g plain flour
olive oil
100g plain flour
1 1/2 tablespoons muscavado sugar
1 litre beef stock (or vegetable if you prefer but add a teaspoon of marmite)
100ml white wine
50ml brandy
sea salt & freshly ground pepper
300g pasta
250 multi seed porridge oats or 100g regular oats and add in the seeds
140 coconut palm sugar (or demerara sugar)
100g chopped pitted dates or sultanas
sea salt & freshly ground black pepper

Grazing – multi seed flapjacks
